Ingredients:
2 The Low Carb Superfood Co. Low Carb Wraps
1 Tube of Tomato Paste
300g Shredded Cheddar Cheese
1 Jar of Pesto
100g Basil
1 Punnet of Cherry Tomatoes, sliced in half.
Preparation
Instructions to make your own Pesto!:
Step 1: Peel the garlic, then pound in a pestle and mortar, add sea salt.
Step 2: Chop the basil leaves and add to pestle and mortar, pound until paste texture forms (or pulse in a food processor).
Step 3: Add the pine nuts to the mixture and pound again, then stir in half the Parmesan.
Step 4: Add olive oil over the mixture to bind the sauce to get it to an oozy consistency.
Step 5: Add the remaining cheese and season with salt and black pepper.
Instructions to make the wraps:
Step 1: Turn oven to 200C﮿.
Step 2: Place wraps onto baking trays or pizza trays. Spread the tomato paste using the back of a spoon evenly over the wraps, leaving a 1cm gap around the edges.
Step 2: Top the wraps with the shredded cheese, cherry tomatoes and dollops of pesto.
Step 3: Cook the pizzas in the oven for 20-30 minutes or until base is crispy & golden brown.
Step 4: Add the fresh basil, slice the pizza into quarters and enjoy sharing this with family and friends!
