Low Carb Grilled Vegetable Wraps

2 Sweet Potato, chopped

2 Brown Onion, sliced

250g Fresh Spinach

2 Red Capscium, sliced

300g Shredded Cheddar Cheese

250g Fresh Spinach

Preparation

Instructions:

Step 1: Turn the oven to 180﮿C, place the sweet potato, onion and red capsicum on an oven tray. Lightly spray with olive oil and season with salt and pepper.


Step 2: Bake vegetables for 40 minutes or until soft and golden brown, move the vegetables around on the tray at the halfway mark (15 minutes) to make sure they’re evenly cooked.


Step 3: Lay out the wraps and add the cooked vegetables to the centre of the wraps. Add the shredded cheese, and fresh spinach to each wrap.


Step 4: Fold up the bottom part of the wrap and secure by folding each side over one another.


Step 5: Turn on the toaster machine or use the oven on the grill setting, put the folded wraps on an oven tray (if using the oven to cook) and grill until the wraps are crispy and golden brown.
