Ingredients:

4 The Low Carb Superfood Co. Low Carb Wraps

800g Skinless Chicken Breasts

1 Large Cos Lettuce, Shredded

100g Pine Nuts

100g Danish Feta

1 Avocado, blend or mush to a smooth texture

4 Eggs

2 cups Bread Crumbs

2 Cups Wheat Flour

Olive Oil

Preparation

Instructions:

Step 1: Clean chicken breasts and lightly dry with a paper towel.


Step 2: Turn the oven to 180C﮿. Crack the eggs and whisk lightly in a bowl, pour the bread crumbs and flour into two separate bowls.


Step 3: Create a prepping station – cover the chicken breast with egg, then with flour, then with the bread crumbs and place on the baking tray. Repeat this with each chicken breast & grill in the oven until chicken is cooked through and golden brown on the outside.


Step 4: Remove the sachet in The Low Carb Superfood Co. Low Carb Wraps packet and microwave each wrap for 10-15 seconds/till warm


Step 5: Lay out the wraps, chop the lettuce and add a handful to the centre of the wrap.


Step 6: Mush the avocado in a bowl by using the back of the fork until smooth in texture.


Step 7: Once the chicken is cooked. Place each chicken breast on the chopping board and slice into strips. Add strips of chicken on top of the lettuce.


Step 8: Add the avocado and pine nuts on top of the chicken. Crumble the feta and sprinkle over the top.


Step 9: Fold up the bottom part of the wrap and secure by folding each side over one another.
