Ingredients:

8 The Low Carb Superfood Co. Low Carb Wraps (2 packets)

24 Falafels (homemade falafel instructions below)

2 Large Tomato

4 Lebanese Cucumbers

400g Danish Feta

500g Fresh Spinach


How to make homemade falafels!


Makes: 24

Ingredients:

150g Dried Chickpeas

½ Large Onion, roughly chopped

3 Garlic Cloves, crushed

½ tbsp Ground Coriander

300ml Olive Oil

Preparation

Instructions to make Falafels:

Step 1: Soak the chickpeas for 12-24 hrs in double the volume of water. Drain and blend with onion, garlic, ground coriander, sea salt and pepper. Blend the ingredients, scrape down the sides of the blender & blend again until it’s a grainy paste.


Step 2: Scoop tablespoon-sized balls and flatten them slightly so you have an oval-shaped circles. Your falafels are ready for frying!


How to make the wraps:

Step 1: Pan fry the falafels or use the air fryer (air fry for 15 minutes @ 200 C﮿) to get the falafels golden and crispy.


Step 2: Remove the sachet in The Low Carb Superfood Co. Low Carb Wraps packet and microwave the whole pack for 45 seconds until warm.


Step 3: Slice the tomatoes and cucumbers so they’re thin-medium in thickness.


Step 4: Wash the spinach and damp with a tea towel to dry up the excess water.


Step 5: Lay out each wrap and add the spinach to the middle section of the wrap, add the tomatoes, cucumber and falafels (3 per wrap). Crumble the feta and sprinkle over the top.


Step 6: Fold up the bottom part of the wrap and secure by folding each side over one another.
